The pantry decides the plate

Most of what makes a meal good or mediocre was decided before anyone turned on a burner. Our kitchen is built on a short list of staples: extra virgin olive oil, avocado oil, grass-fed butter and tallow; organic dairy and eggs; grass-fed beef, pasture-raised chicken and wild caught seafood; organic produce bought for the week, not the month; and a long-fermented sourdough starter that turns into bread, English muffins and croutons.

What to keep at home

If you cook even two nights a week alongside delivered meals, a small organic pantry closes most of the gap:

  • Extra virgin olive oil and avocado oil — the two fats that cover almost every pan
  • Grass-fed butter for finishing, eggs from pasture-raised hens
  • A sourdough loaf — toast, sandwiches and croutons from one purchase
  • Lemons, garlic and a hard cheese for turning leftovers into dinner
  • Bone broth or good stock for rice, grains and quick soups

Why we don't stock substitutes

Every shortcut in a commercial kitchen exists to stretch shelf life or margin — seed oils in dressings, shortening in desserts, stabilizers in sauces. None of those are in our kitchen, which is why the menu changes with the produce and why some dishes leave the card when the right ingredient isn't available.

If keeping that pantry stocked is the part that never happens, that is exactly what the weekly menu is for. Meals are cooked from these ingredients the morning of delivery, keep five to six days in the refrigerator, and arrive with reheating notes — the pantry, already cooked.
