Ask about sourcing before you ask about price
Per-guest pricing only means something once you know what is in the food. Ask whether produce is organic, whether the beef is grass-fed and pasture-finished, whether the chicken is pasture-raised, and what oil the kitchen cooks in. Those four answers explain most of the price difference between two DFW quotes.

- How do you handle allergies and dietary restrictions?
- What exactly does the per-guest number include — service, setup, disposables?
- Who delivers, and is there a setup window?
- Can I see photos of a spread you delivered, not a stock image?
- What happens if my guest count changes a few days out?
- Do you cook with seed oils?
- What is the deposit and cancellation policy?
Lead time is the constraint people underestimate
We ask for 72 hours notice for catering orders under 50 guests and a week for larger events. That is not padding — organic produce and pasture-raised proteins are ordered against your menu, not pulled from a walk-in. Holiday weekends and graduation season fill first.
